In the mouth

How it tastes

Sweet, floral, muscat-grape or lychee, soft honey. Delicate and fragrant.

Traditional use

Elderflower cordial is a kitchen craft; the tea is the old diaphoretic — a light sweat, then bed. Folk practice used the flower more for feverish colds and the berry more for the deeper winter siege.

In the cup

1 tbsp dried flowers, covered steep 8 minutes. Drink warm, then rest. Cordial in hot water is the gentler household version.

Sour blood · sour

Sour is cooling and astringent. It draws and binds, thickens thin blood, starts saliva, and hydrates even as it tightens. Sour plants carry the antioxidants of fruit. They move mucous and support the lungs — large doses irritate. Lemon-family plants show up again and again in sinus cups.

The promise

A careful hand

Ordinary tea for a healthy adult.

The flower is the tea. Raw berries, leaves, stems, and unripe fruit hold cyanogenic glycosides — berries must be thoroughly cooked. Do not tea the other parts. Occasional mild belly upset.
